NOVEM was born out of the union of our marriage. Novem is Latin for November. The month that my wife & I started dating & got married in. My wife is my anchor . She gave me the confidence to start my own dreams instead of making someone else’s . I’ve catered & made dough for many celebrities , artists , & athletes such as the back to back champions the LA Dodgers. Seeing those reactions of how good my dough was received propelled me to get into the business our selves & share our passion with you & your loved ones.

NOVEM is contemporary artisan pizza built on patience, precision, and obsession over the small details. I partner with local Italian butchers , local farmers market , & imported flours . This is a slow fermented dough - intentional flour blends, Airy crust that eats light but has structure. A bite that makes you pause for a second. The foundation is everything. I work with high-quality flours and controlled fermentation to create a dough that’s alive — one that develops flavor naturally instead of being forced.
