I got a bachelor’s in fine arts and moved to New York City to pursue anything art or music related. Ended up in school again, this time for cake at the International Culinary Center. Moved around a bunch but ended up near my childhood favorite place, Galveston. Now I’m making cakes for my favorite community of people.

What truly defines my work is a commitment to the highest quality ingredients and the dedication of a scratch-made kitchen. Unlike traditional, sugary southern sweets, I specialize in sophisticated European recipes and techniques. This results in cakes and frostings that are light, balanced, and intentionally less sweet, allowing the true flavors of our premium ingredients to shine through for a refined dessert experience your guests will love.

    Exquisite

    Erin was so easy to work with. I had a vision and what she created was spot on. She pays attention to detail. Our cake was beautiful, tasteful, the raspberry and chocolate filling was so perfect. We received so many compliments.

    I really love the lemon blueberry

    I’m in love with the lemon blueberry cake. Cake is moist and the lemon and cream cheese are sooo good

    Best cake I’ve ever had

    I’ve had a lot of cake in my life but the cake from Jazz Bird is simply the best. I love the chocolate with ganache on top. I’ve had a few of the cakes from the farmers market in Galveston, they are all so goood.
